Abstract

 In this paper, the effects of sodium dodecyl benzene sulfonate (SDBS) on the structure of papain were evaluated by the fluorescence spectroscopy and UV-vis absorption spectroscopy. The fluorescence emission spectra and synchronous fluorescence spectra indicated that there were interactions between SDBS and papain. Meanwhile, the microenvironment of the amino acid residues in the papain was changed. The UV-vis absorption results showed appreciable conformational changes in papain. The above results are significant in evaluating the toxic effects induced by SDBS in vivo
